Not only are these muesli bars a cinch to make they are also nut-free {and sugar-free} which makes them the perfect addition to a school lunchbox.
dry ingredients:
1 cup rolled oats
1/4 cup wheat germ
1/4 cup spelt flour
1/2 cup shredded coconut
1/2 cup mixed seeds – flaxseeds, sesame seeds, pepitas, sunflower seeds
3/4 cup dried fruit – I use whatever I have on hand…a mixed fruit medley for a slightly more decadent treat or cranberries/raisins for something a little plainer. Any dried fruit would be lovely and the fruit can even be omitted if your children are a little on the fussy side. Please note if you do omit the fruit this may not be sweet enough for you in which case go with either maple/golden syrup or honey as your sweetner
{for a non school treat you could add some coarsely chopped mixed nuts}
Add the above ingredients to a bowl and mix to combine….
wet ingredients:
1/3 cup coconut oil
1/4 cup tahini – a homemade nut butter can replace the tahini
1/4 cup rice malt syrup – maple/golden syrup or honey can replace the rice malt syrup for a sweeter version
Place the wet ingredients into a small saucepan and stir over a low heat till melted. Add to dry ingredients and mix well. Press the moist mixture into a square lined tin and bake in a moderate oven approximately 30 minutes till golden. Allow to cool slightly before slicing then leave in tin to cool completely. Store in an air tight container.
This recipe can be easily adapted to your liking, don’t be afraid to experiment…the skies the limit.

*edited: when I first cut back on sugar the kids and I didn't find these bars 'sweet' enough to satisfy our sweet tooth but we have since adapted and find these sweet enough. Maybe try using the suggested sweeteners the first time you make this and see how you find it or a mix of two.

yum yum yum! i love this idea. I don't have all the ingredients so I may play around with a few of them, but I do like cutting out of sugar and all those nasty preservatives that are in any store bought version! xx
Yum! I love recipes like these, you can make them your own by adapting the ingredients to suit. I think these would be perfect for an afternoon treat when my sweet tooth seems to kick in xoxo

Wonderful idea! There really is nothing like homemade, is there? it's healthy, you know what goes into your little ones mouths (for me... well I'm yet to become a mother but hopefully one day soon) and you feel a sense of achievement for making something that is a) nutritious and b) desired to be eaten. Thank you for this recipe! I am on the lookout for a healthy, nut-free snack that my lads like. While I thought I had some winners, they have since decided they don't like them anymore. Sigh.
